I often get asked how many days a week I practice ‘yoga’. I find this an odd question to respond to, and often my answer shocks most people, because a lot of the time my ‘practice’ isn’t solely mat based. The Salt n’ Vinegar flavour combo takes me back to my childhood. This tart is perfect. Tangy, sweet, tasty, and full of nutritional goodness. It’s a different take on the most recent recipe I posted, the apricot tart, and it is just as good. Plus, it’s got the psyllium husk as the super ingredient that binds the topping together (literally fruit, water, psyllium) and helps your digestive system.
This recipe is so simple, tasty, and healthy. It works for almost any fruit as a topping (in fact mixing and matching also goes well and you can create layers – there’s a blackberry pie recipe at the bottom, or try a combo of apricot and dates topped with a layer of cacao and coconut for a healthy chocolate caramel slice). It is cheap, QUICK, raw, vegan, refined sugar free, paleo friendly, gluten free, nut free, it tastes amazing…Plus it’s good for your digestive system thanks to the special key ingredient.
Having been away the last three weeks, in between moving countries, the one thing I missed most (apart from the dog and my love of course…) is my own cooking. We moved to Ireland on the weekend and so far the weather has been wonderful… until today where the wind and rain have taken center stage. So a heart warming bowl of homemade curry was just what was needed. However, with a lack of any curry power in the house I had to improvise with whatever was on hand, and it came out like a sweet and perfect curry with all the right flavour tones.
