This is perfect for a post dinner dessert as the added peppermint is beneficial for digestion and leaves the palate feeling refreshed.
I whipped this up for the girls on my retreat earlier this year and it went down wonderfully.
🍉🍉🍉 This serves 8-10 bowls 🍉🍉🍉
Simply freeze 1/2 a watermelon chopped in to chunks (lay flat on a dish or plate so it doesn’t clump together). Once frozen, about 4 hours, remove and allow to sit to lightly soften for 10 minutes and then add to food processor/good blender with 2-3 drops of high quality organic peppermint essential oil (or you can use 1 handful of fresh mint however this will add green flecks!)
Optional extra: the juice of one lime.
Blend away until a smooth texture is reached. If you want this runnier, or your blender needs some help add a little water at a time. Also, if you aren’t a minty fan and just want watermelon – just blend up some frozen watermelon.
If you want to set it harder (and have the patience to wait…) simply place in a dish in to the freezer and fluff with a fork every 10 minutes for 30 minutes.
Then top with some fresh mint for decoration – like my wonderful assistant/goddess here did.
