5 MINUTE CHUCK-IN-WHATEVER-YOU-GOT HEALTHY NOODLE DISH

noodlesMy names Cat and I’m a former noodle box addict. Fortunately for me though, I’m not having to go cold turkey just because I choose to no longer eat junk food.

Enter ‘zoodles.’ Noodles made out of spirallized zucchini (courgettes; or you can use carrots or sweet potato). This trick works for pasta dishes too (check out this other recipe here) and makes quick meals so do-able and tasty. And I swear, on my tub of almond butter, it doesn’t even taste ‘zucchini-y’ when you eat the zucchini raw with the toppings.

 

So simple little recipe goes as follows. For each person use:

 

1 zucchini spirallized

1 clove of garlic, minced

1/2 tsp mixed herbs

1/4 cup of black beans (or bean of your choice; or 1 egg)

1 tomato diced

1 small handful of leafy greens (I like watercress or rocket wilted to give a peppery flavour)

1/2 a capsicum/pepper

1 Tablespoon of a clean and healthy dressing of your choice (I like this mellow yellow balsamic one as it is sweet and tangy; if you can’t get any you could whip up your own using some olive oil, honey and balsamic or apple cider vinegar)

pinch sea salt

Or throw in any veggies you have lying about!

 

How to:

Simply mix all the ingredients (except the zucchini) in a pan on medium heat for two minutes. Then stir through the zucchini and serve immediately (you can add a little extra sauce if you like it a bit more saucy 🙂 )
