I love cooking. Spending hours in the kitchen is therapy for me. However, I also realise that some days this is just impossible and lunch or dinner needs to be whipped up in a flash. Too often people find it too difficult to make a quick meal and instead opt for “fast-food” which in turn leads to nutritionally insufficient “food” like products. So for this reason I am a fan of making meals that are filling, tasty, and nutrient dense in minutes. The original fast food!
Yesterday I got home from the gym and was absolutely raging for lunch. So whipped this little beauty up. Its perfect and packs a flavour punch! As always feel free to change the ingredients and spices to suit your taste buds. However this mix is a dream in my eyes!
5 MINUTE CLEAN PROTEIN PACKED (MEAT & DAIRY FREE) CURRY BOWL
1 can green lentils…
1 garlic clove
1/2 TBsp curry powder (organic high quality & sugar and additive free if possible) – also adjust spices to taste
2 tsp cayenne pepper (less if you don’t want it spicy!)
2 TBsp organic tomato paste
Olive oil and green beans to serve
Baby spinach to serve
Cook onion and Garlic in small amount of water till soft. Add mushrooms and spices. When soft add tomato paste. Add some extra water to make tomato paste spread further. Add lentils, beans (or veggies if choice) and eggs and scramble till cooked. Dress with sea salt and olive oil to taste.
Serve on bed spinach or brown rice or quinoa – adjust to suit your needs!
