EATING HEALTHY DOESN’T NEED TO BE EXPENSIVE OR CONFUSING

One of my skills is being able to cook healthy for very cheap. For me I eat all organic and manage to do so for under £4 a day (about seven dollars a day; and if need be I could probably do so for a lot less). For example below is a super easy and nourishing meal that costs under £3 and feeds two with all organic ingredients.. the myth that eating healthy is expensive is a load of rubbish (plus it also pays off by giving you better health in the long term).

 

Ingredients:

1 smal butternut squash/pumpkin

2 handfuls of green beans

200g mushrooms

2 organic eggs

2 handfus of baby spinach

1 Tablespoon of Coconut oil (half for pumpkin half for eggs)

Sea salt and pepper to taste

 

The above gets whipped up with minimal effort and stuffs 2 people well – follow below:

  1. Cut the butternut squash/pumpkin in half, rub with a little coconut oil (this makes it taste even sweeter!) and roast at 180 degrees for 50 minutes till tender – no need to turn (and yes keep the seeds in and eat them and the skin – they’re loaded with nutrients, plus it means no waste!!)
  2. Take the green beans and throw them in the same tray as the pumpkin for the last 20 minutes of cooking.
  3. Then in a pan cook off 200g of mushrooms in some water till soft. Then cook two organic eggs in the same pan (less mess) with a little coconut oil to your liking.
  4. Serve with some spinach, sea salt and a generous load of fresh cracked pepper.

 

Simple, cheap, and filling – plus the amount of actual prep time and effort required is near zilch (the eggs being the only thing requiring much attention – win!)

Don’t let eating healthy become too complicated – learn and get more everyday support and nutrition though this.
