THE PERFECT RAW VEGAN EASTER GIFTS – chocolate covered mulberries & macadamias

It’s almost Easter time so I thought I’d whip up some chocolate goodies to have on hand to give away as cute gifts (& keep my belly happy). This recipe requires a handful of ingredients, is healthy, refined sugar free, vegan, raw, and suits a paleo diet. You’re welcome.

 

It feels like its been forever since I’ve done a recipe post but that’s because I’ve been working behind the scenes on an all vegan wholefoods recipe ebook – ridiculously excited to release it soon (check out my other goodies here by the way – they’ll fill you up with so much love and goodness).

 

Now this may seem like a lot of steps, and lots of different recipes but that’s because I’ve made 5 different items to put in jars. But its super quick so don’t worry, or feel free to do just one. Or two. Or all five for that extra special touch.

 

Recipe 1: Caramel Roasted Macadamias (this is the one item that isn’t raw so if you really wanna make it raw do this in the dehydrator)

Ingredients:

  • 2 tsp coconut oil
  • 2 Tbsp coconut sugar
  • 1 cup macadamias
  • Pinch sea salt

 

How to:

  1. Preheat the oven to 180.
  2. In a bowl melt the coconut oil over a larger bowl or saucepan of hot water.
  3. Once melted  add the coconut sugar and salt and stir to combine.
  4. Add the macadamias and stir to coat.
  5. Place on an oven tray and put them in to the oven for 12-15 minutes, stirring every 5 minutes to avoid burning (start on the following recipes whilst this ones cooking).
  6. Allow to cool on the tray.

 

Recipe 2: Raw White Chocolate Covered Macadamias & Mulberries

Ingredients:

  • 1/4 cup coconut sugar
  • 1 tbsp water
  • 1/2 cup raw cacao butter drops
  • 1 cup mulberries
  • 1/2 cup macadamias
  • Pinch sea salt

 

How to:

  1. First add the coconut sugar and water to a dish over hot water to melt together (this helps the coconut mix with the cacao butter).
  2. Then add cacao butter drops and using a whisk or fork, stir over heat until melted.
  3. Remove from the heat and split the mixture in to 2 bowls – add mulberries to one, and macadamias to the other.
  4. Stir every 5 minutes while the mixtures slowly hardens as the chocolate returns to room temperature.
  5. Just before the mix is fully set, spread the macadamias and mulberries on plates to set and gently stir to keep them from clumping (to make for easy adding to jars later)

 

Recipe 3: Raw Chocolate Covered Macadamias & Mulberries

Ingredients:

  • 1 cup raw cacao butter drops
  • 3/4 cup raw cacao powder
  • 1/2 cup coconut sugar
  • 1 cup mulberries
  • 1/2 cup macadamias
  • Pinch sea salt

 

How to:

  1. In a dish over hot water (not too hot just enough to make it melt slowly – you want to keep it raw to keep the goodness in) add cacao butter drops and using a whisk or fork stir until melted.
  2. Once melted add the sea salt, cacao powder and coconut sugar and stir to combine.
  3. Remove from the heat and split the mixture in to 2 bowls – add mulberries to one, and macadamias to the other.
  4. Stir every 5 minutes while the mixtures slowly hardens as the chocolate returns to room temperature.
  5. Just before the mix is fully set, spread the macadamias and mulberries on plates to set and gently stir to keep them from clumping.
  6. Gently pour any remaining chocolate over the plate to make for extra chunky chocolatey goodness.
  7. Once set add to jars and store at room temperature or in the fridge for up to one month (at least; these can also be stored in the freezer for up to 3 months).

 

Feel free to mix and match – have all of these like I have, or do just the white chocolate version or just the chocolate version – whatever your Easter cravings are (or whatever the special person you are making these for would like). Pop your mix in cute little jars, add some string, blow a kiss, and get ready to dish these goodies out for guilt free Easter gifts!
