This recipe is versatile, you can swap out and add in and make it with whatever you have. Don’t over complicated eating well – It really is simple.
For One Simply Blend:
1 1/2 cups of cooked boiled pumpkin
1 cup coconut milk
1/2-1 cup water (depending how runny or thick you like your soup)
Splash Apple Cider Vinegar (to taste)
1 tsp curry powder
1/2 tsp chilli powder
Pour in a pan to heat and serve.
You can add lentils or chickpeas (or spinach, onion, garlic, sweet potato, carrot, any veggie really!) for an extra boost to make it more filling or enjoy a light meal like the above.
