These. Are. Amazing. A variation on typical “mushy peas.” Now I know, Mushy Peas don’t sound (or look) all that convincingly delicious, and if you have ever seen them slopped in to a container in typical fish and chip takeaways you’ll wonder why I’m so excited by these. As someone who doesn’t like peas, I am obsessed with this mushy pea recipe I whipped up the other day when my pantry and fridge were stark naked. That’s how good these are – I’m now a pea lover.
Simple, delicious, and the perfect way to jazz up a simple vegetable to get those fussy eaters to get some greens in.
Ingredients (serves 4 as a side):
400g frozen organic peas
2 TBsp olive oil
3TBsp water (about 1 litre required to boil the peas also)
1/4 tsp cumin
1/4 tsp paprika
A good sprinkle of cayenne pepper (if you like them spicy!)
A good pinch of sea salt
Boil up your peas in a pot for about 5 minutes until cooked (or according to your packet).
Remove from the heat and drain.
Re-add the peas to the pot and add the remaining ingredients.
Using a stick blender puree the peas until they meat your mushy-ness desire.
